A Healthy Recipe for Diabetics (and all Dessert Lovers)

Our CHA staff have tried this pineapple pie recipe (courtesy of food.com) and give it high marks.

If you have friends or family who are diabetic, it can be hard to find a great dessert that is suitable for your diet and incredibly scrumptious*. But you’re in luck. Our CHA staff have tried this pineapple pie recipe (courtesy of food.com) and give it high marks.

SERVINGS: 6

INGREDIENTS:

  • 1 (20 ounce) can crushed pineapple in juice (drained)
  • 1 (1 ounce) package sugar-free instant vanilla pudding mix (4 serving size)
  • 1 cup sour cream (low fat works fine)
  • 1 teaspoon Splenda or Equal sugar substitute
  • 1 nine-inch graham cracker pie crust
  • 1 (8 ounce) carton whipped topping (low fat or fat free works fine)

DIRECTIONS:

  1. Mix all ingredients until well combined.
  2. Pour into graham cracker crust.
  3. Spread whipped topping on top of pie to cover.
  4. Chill until serving
  5. Serve and enjoy!
